Makes 6 servings
- 2 tbsp melted butter
- 2 tbsp olive or canola oil
- 1 tsp grated gingerroot
- Pinch of salt
- 6 sweet potatoes, cut lengthwise into quarters
In a small bowl combine melted butter, oil, gingerroot and salt; stir well. Brush the sweet potatoes with oil mixture and grill on an uncovered grill over medium heat 7 to 8 minutes or until tender. If desired, cut into bite-size pieces before serving.
