Berry Brownie Pizza

For a sweet twist on tradition, try this luscious dessert pizza. Cream cheese frosting and fresh berries sit atop a brownie base. The chocolate dough holds its shape when rolled out and baked on a pizza stone or metal pan—the result is a chewy and delicious foundation. Fresh berries with a sprinkle of powdered sugar add a sweet-tart burst of flavor to this rich indulgence.

Makes 12 servings

Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ⅔ cups granulated sugar
  • 6 tbsp butter
  • 1 ½ tbsp water
  • 3 oz unsweetened chocolate, finely chopped
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 recipe Cream Cheese Frosting (see below)
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh raspberries
  • ¾ cup fresh blueberries
  • Confectioners’ sugar for dusting

Directions

  1. Preheat oven to 350°F. In a medium bowl combine flour, baking soda and salt; set aside.
  2. In a medium saucepan combine sugar, butter and water. Bring to a boil over medium heat, stirring constantly. Boil 1 minute. Remove from heat. Add chocolate and stir until melted. Allow to cool briefly.
  3. Beat in egg and vanilla. Add flour mixture to saucepan; stir well.
  4. Spread batter onto parchment-lined cookie sheet or pizza stone to ½ inch thick. Bake 15 to 20 minutes or until set. Cool on a wire rack. Spread Cream Cheese Frosting (see below) over crust and top with strawberries, raspberries and blueberries. Dust with confectioners’ sugar.
