Tricolor Pasta Salad is an easy make-ahead recipe.

Tricolor Pasta Salad

The classic pasta salad gets a visual lift with tricolor rotini, the colors playing off the carrots and green bell pepper. The dressing is sweet yet piquant, with enough zing to encourage seconds.

Makes 16 servings


  • 1 pound tricolor rotini, cooked and drained according to package directions
  • 2 cups shredded carrots
  • 1 green bell pepper, seeded and diced
  • ½ cup chopped onion
  • 2 cups mayonnaise
  • 1 (12-ounce) can sweetened condensed milk
  • 1 cup granulated sugar
  • ½ cup vinegar
  • 1 tsp salt
  • 1 tsp pepper (optional)


In a large bowl combine pasta, carrots, green pepper and onion. For dressing, in a medium bowl stir together mayonnaise, condensed milk, sugar, vinegar, salt and, if desired, pepper until well blended. Add dressing to pasta mixture and mix well. Chill for at least 4 hours before serving.
