Makes 12 servings
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 2 tablespoons fresh basil, chopped
- Ground black pepper
- 12 medium scallops
- 12 thin slices prosciutto
In a medium bowl, stir together vinegar, olive oil, basil and pepper. Add scallops and toss gently to coat. Cover and marinate at room temperature for 15 minutes.
Preheat oven to 350°F. Fold each slice of prosciutto in half lengthwise and wrap each around one scallop. Place in a greased baking dish, seam side down. Bake for 15 minutes or until scallops are opaque.
