Peach and Oat Cobbler

Served warm from the oven, this crunchy cobbler is comfort food at its finest. Give Grandma’s recipe a healthy makeover with whole-grain flour and naturally sweet peaches in peach nectar. On busy weeknights, frozen sliced peaches are a good nutritional substitute for fresh and make it easy to serve warm cobbler year-round.

Ingredients

  • Nonstick cooking spray
  • ½ cup whole-grain oat flour
  • ½ cup all-purpose flour
  • 2 tbsp plus ⅓ cup granulated sugar, divided
  • 1 ½ tsp baking powder
  • ⅛ tsp salt
  • 3 tbsp butter
  • ¼ cup peach nectar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 (16-ounce) bags frozen sliced peaches
  • ⅓ cup skim milk
  • Turbinado sugar (optional)

Directions

  1. Preheat oven to 375°F. Lightly spray a 9-inch square baking dish with nonstick cooking spray.
  2. For topping, in a medium bowl combine flours, 2 tablespoons granulated sugar, baking powder and salt. Cut in butter with a pastry blender or two table knives until the flour mixture resembles coarse crumbs. Set aside.
  3. For filling, in a saucepan combine peach nectar, ⅓ cup sugar, cornstarch and lemon juice. Bring to boiling over medium-high heat. Add peaches, stirring to coat. Remove from heat and pour into prepared baking dish.
  4. Stir milk into topping mixture, stirring until just moistened. Using spoons, drop topping in small mounds onto filling. Sprinkle with turbinado sugar, if desired. Bake 30 to 35 minutes or until a toothpick inserted near center comes out clean.
