Orange-Spice Shortbread

Biscuitlike shortbread cookies take on the flavors of cinnamon, ginger and orange zest. The fun is in deciding which cookie-cutter shapes to give them!

Makes 12 servings

Ingredients

  • ½ cup unsalted butter (at room temperature)
  • ½ cup powdered sugar
  • 2 tsp orange zest
  • ½ tsp ground ginger
  • ¼ tsp ground cinnamon
  • 1 cup all-purpose flour

Directions

  1. Preheat oven to 325°F. In a mixing bowl beat butter with an electric mixer on medium speed 30 seconds. Add powdered sugar, orange zest, ginger and cinnamon; beat until combined. Beat in flour until well mixed, kneading if necessary until smooth.
  2. On a parchment-lined cookie sheet, roll dough to ¼ inch thick. Cut dough into desired shapes.
  3. Bake 22 to 24 minutes or until lightly golden. Transfer to a wire rack and let cool.
