Macadamia Island Drops

Serve these hint-of-the-tropics cookies with iced tea or a light fruit-infused water.

Dried papaya and pineapple, chopped macadamia nuts and white chocolate chips give these cookies a hint of the tropics. Serve these perfect summer sweets with iced tea or a light fruit-infused water.

Makes 48 servings

Ingredients

  • 1 cup butter, softened
  • 1 ½ cups granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp salt
  • ½ tsp baking soda
  • 1 ½ cups white chocolate chips
  • ½ cup chopped macadamia nuts
  • ⅓ cup chopped dried pineapple
  • ⅓ cup chopped dried papaya

Directions

  1. Preheat oven to 350°F. In a mixing bowl beat butter, granulated sugar and brown sugar with an electric mixer until fluffy. Add eggs, one at a time, beating after each addition. Beat in vanilla.
  2. In a medium bowl stir together flour, salt and baking soda; add to butter mixture and beat until combined. Stir in white chocolate chips, macadamia nuts, pineapple and papaya.
  3. Drop by tablespoons 2 inches apart onto ungreased cookie sheets. Bake 12 minutes or until bottoms just begin to brown. Transfer to a wire rack and let cool.
