Macadamia Island Drops
Serve these hint-of-the-tropics cookies with iced tea or a light fruit-infused water.
Dried papaya and pineapple, chopped macadamia nuts and white chocolate chips give these cookies a hint of the tropics. Serve these perfect summer sweets with iced tea or a light fruit-infused water.
Makes 48 servings
Ingredients
- 1 cup butter, softened
- 1 ½ cups granulated sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 ½ tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp salt
- ½ tsp baking soda
- 1 ½ cups white chocolate chips
- ½ cup chopped macadamia nuts
- ⅓ cup chopped dried pineapple
- ⅓ cup chopped dried papaya
Directions
- Preheat oven to 350°F. In a mixing bowl beat butter, granulated sugar and brown sugar with an electric mixer until fluffy. Add eggs, one at a time, beating after each addition. Beat in vanilla.
- In a medium bowl stir together flour, salt and baking soda; add to butter mixture and beat until combined. Stir in white chocolate chips, macadamia nuts, pineapple and papaya.
- Drop by tablespoons 2 inches apart onto ungreased cookie sheets. Bake 12 minutes or until bottoms just begin to brown. Transfer to a wire rack and let cool.
