Grilled Sweet Corn

Makes 6 servings

Ingredients

  • 2 tbsp melted butter
  • 2 tbsp olive or canola oil
  • Pinch of salt
  • 6 ears sweet corn

Directions

  1. In a small bowl combine melted butter, oil and salt; stir well. Without removing corn husks, pull back husks and remove silk. Brush kernels with butter mixture and replace husks as tightly as possible. Soak ears in cold water 1 to 3 hours. Remove corn from water. Place two ears on a large piece of heavy aluminum foil and wrap well. Repeat with remaining corn. Grill on an uncovered grill over medium-high heat 15 to 20 minutes, turning once. Remove foil and place corn directly on grill. Cook 5 minutes or until husks are charred, turning frequently. Serve with additional butter and salt, if desired.
