Granola Pumpkin Parfait

This parfait features spiced pumpkin puree, cream cheese and low-fat whipped topping layered with vanilla Greek yogurt and cinnamon granola.

Spiced pumpkin puree is combined with cream cheese and low-fat whipped topping, then layered with vanilla Greek yogurt and nut-studded granola to create a taste sensation in contrasting color and texture. These parfaits can be put together at mealtime or made ahead and chilled for a few hours.

Makes 6 servings

Ingredients

  • 1 cup pumpkin puree
  • 8 oz low-fat cream cheese, softened
  • ½ tsp pure vanilla extract
  • ⅓ cup sugar
  • 1 tsp pumpkin pie spice
  • 1 cup low-fat whipped topping
  • 1 ½ cups vanilla Greek yogurt
  • 1 ½ cups cinnamon granola

Directions

  1. To make pumpkin cheesecake mixture, in a large bowl add pumpkin and cream cheese. Beat with an electric mixer on medium speed until combined. Add vanilla, sugar and pumpkin pie spice. Beat until combined. With a rubber spatula fold in whipped topping.
  2. To assemble each parfait, pipe or spoon about 1 tablespoon of Greek yogurt into the bottom of a 5-ounce glass. Next, place about 1 tablespoon of granola on top of Greek yogurt. Pipe or spoon about 1 tablespoon of pumpkin mixture onto the granola. Repeat until you have 8 layers. Chill parfaits in refrigerator for 30 minutes before serving.
