Sparkling Grapefruit Sodas

Sweet and tart, crisp and cool, these sippers start with a simple syrup made with grapefruit juice and peel and fresh thyme for a floral note. Grapefruit-flavored sparkling water adds fizz.

Makes 4 servings

Ingredients

  • 1 cup fresh grapefruit juice
  • ½ cup Grapefruit-Thyme Simple Syrup, recipe below
  • 4 cups grapefruit-flavored sparkling water
  • Grapefruit slices, for garnish

Directions

  1. 1. For each serving of soda, pour ¼ cup grapefruit juice into an ice-filled glass; add 2 Tbsp. Grapefruit-Thyme Simple Syrup. Top with 1 cup grapefruit-flavored sparkling water. Garnish with grapefruit slices and thyme sprigs, if desired.
  2. GRAPEFRUIT-THYME SIMPLE SYRUP: In a medium saucepan, heat 1 cup granulated sugar, 1 cup water and ¼ cup fresh grapefruit juice over medium heat for 5 minutes or just until sugar is dissolved, stirring occasionally. Remove from heat. Stir in 4 large strips grapefruit peel and ¼ cup tightly packed fresh thyme sprigs. Let stand, uncovered, at room temperature for 1 hour. Store syrup in a tightly covered container in the refrigerator up to 2 weeks.
