Sizzling with smoky perfection, these juicy, tender mahi mahi kabobs are simple to make. Marinated chunks of mahi mahi alternate with fresh pineapple and colorful bell peppers for an easy grilled meal.

Makes 6 servings

Ingredients

  • 1 pound mahi mahi fillet, cubed into 1-inch chunks
  • 1 cup Asian sesame salad dressing
  • 1 small fresh pineapple, peeled and cut into 1-inch chunks
  • 2 medium yellow bell peppers, cut into 1-inch squares
  • 2 medium green bell peppers, cut into 1-inch squares

Directions

  1. Marinate mahi mahi chunks in dressing for 2 hours, covered, in refrigerator. Meanwhile, soak wooden skewers in water at least 30 minutes. Preheat grill to medium heat. Thread skewers, repeating following pattern: pineapple, yellow bell pepper, green bell pepper, mahi mahi, yellow bell pepper and green bell pepper. Grill 8 to 10 minutes or until fish flakes, turning occasionally to cook evenly.
