This lively mix of juicy nectarines, crunchy garden accents and freshly squeezed lime juice creates a perfect condiment for sea bass, other fish or even chips.

Makes 4 servings

Ingredients

  • 1 large ripe nectarine, pitted and diced
  • 3 tbsp minced red bell pepper
  • 1 ½ tbsp diced onion
  • 1 tbsp chopped cilantro
  • 2 tsp fresh lime juice
  • 1 to 2 teaspoons minced jalapeño peppers*
  • 1 (2-finger) pinch Lemon Flake or Fleur de Sel de Camargue salt

Directions

  1. Combine all ingredients. Cover and chill for 30 minutes to blend flavors. Serve with grilled fish.
  2. *Note: Chile peppers contain volatile oils that can burn your skin and eyes. When working with jalapeños, wear protective gloves.
