Macerated berries anchor this vibrant parfait, left, layered with vanilla Greek yogurt, plump, whole berries and crunchy pistachios for a side that is simply délicieux.

Makes 1 serving

Ingredients

  • ½ cup fresh raspberries, plus additional for topping
  • ½ cup sliced fresh strawberries, plus additional for topping
  • 2 tsp sugar
  • ⅔ cup plain Greek yogurt
  • Fresh blueberries, for topping
  • Pistachios, for topping

Directions

  1. In a small saucepan combine ½ cup raspberries, ½ cup sliced fresh strawberries and sugar. Cook over medium heat for 2 to 3 minutes or until juices form, stirring occasionally. Remove from heat. Cool for 5 minutes.
  2. Reserve 2 tablespoons berry mixture. Divide remaining berry mixture between two 1-cup glass jars. Layer yogurt on top and add reserved berry mixture. Top with additional fresh raspberries and strawberries, blueberries and pistachios. Serve immediately or cover and refrigerate for up to 2 hours.
