Horseradish-Fennel Sauce

Tender beef practically cries out for this creamy sauce flavored with the piquant tang of horseradish and savory garlic. Chopped fennel bulb adds a crisp touch of sweetness.

Ingredients

  • ⅓ cup finely chopped fennel bulb
  • ⅓ cup prepared horseradish
  • ¼ cup sour cream
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ½ cup whipping cream

Directions

  1. In a medium bowl combine fennel, horseradish, sour cream, garlic and salt. Cover and refrigerate up to 2 hours before serving.
  2. Just before serving, place whipping cream in a chilled mixing bowl. Beat with an electric mixer on high until soft peaks form. Gently fold in horseradish mixture. Serve immediately.
