Blueberry Crostini

Ingredients

  • 1 (18- to 24-inch) French baguette
  • Oil
  • ½ cup mascarpone cheese
  • 1 ½ cups fresh blueberries, washed and dried
  • 4 large basil leaves, cut into strips
  • Honey, to taste

Directions

  1. Preheat oven to 350ºF. Cut baguette into 32 slices. Brush both sides of each slice with oil and place on a baking sheet. Bake 12 to 15 minutes or until golden, turning crostini over once during bake time. Let cool.
  2. Spread mascarpone on top of crostini. Divide blueberries among crostini. Garnish crostini with basil and drizzles of honey.
