Makes 12 servings
- 1 cup + 2 tablespoons all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 1 ⅔ cups granulated sugar
- 6 tbsp butter
- 1 ½ tbsp water
- 3 oz unsweetened chocolate, finely chopped
- 1 large egg
- 1 tsp vanilla extract
- 1 recipe Cream Cheese Frosting (see below)
- 1 cup fresh strawberries, sliced
- 1 cup fresh raspberries
- ¾ cup fresh blueberries
- Confectioners’ sugar for dusting
Preheat oven to 350°F. In a medium bowl combine flour, baking soda and salt; set aside.
In a medium saucepan combine sugar, butter and water. Bring to a boil over medium heat, stirring constantly. Boil 1 minute. Remove from heat. Add chocolate and stir until melted. Allow to cool briefly.
Beat in egg and vanilla. Add flour mixture to saucepan; stir well.
Spread batter onto parchment-lined cookie sheet or pizza stone to ½ inch thick. Bake 15 to 20 minutes or until set. Cool on a wire rack. Spread Cream Cheese Frosting (see below) over crust and top with strawberries, raspberries and blueberries. Dust with confectioners’ sugar.
