Top delicious homemade whole wheat pizza crusts with sliced fresh mozzarella, juicy cherry tomatoes, crisp baby arugula, spinach, microgreens, shaved Parmesan cheese and a sprinkle of fragrant fresh basil for a vegetarian pizza that looks and tastes indulgent.

Makes 4 servings

Ingredients

  • 1 recipe Herbed Whole Wheat Pizza Dough (see below)
  • 8 oz fresh mozzarella cheese, sliced and divided
  • ¼ cup extra-virgin olive oil
  • 2 tbsp white wine vinegar
  • ¾ tsp stone-ground Dijon mustard
  • ¼ tsp coarse kosher salt
  • Cracked black pepper, to taste
  • 2 cups baby arugula
  • 1 cup baby spinach
  • ½ cup microgreens
  • ¼ cup cherry tomatoes, sliced
  • ¼ cup shaved Parmesan cheese
  • Fresh basil, for garnish

Directions

  1. Prepare Herbed Whole Wheat Pizza Dough (see below).
  2. Preheat oven to 425°F. On a lightly floured surface, roll each dough portion into an 8-inch circle. Transfer each circle to a baking sheet. Top each with 4 ounces mozzarella. Bake 15 to 20 minutes or until outer crust is crisp and cheese is melted. Remove from oven; cool slightly.
  3. For vinaigrette, in a small bowl whisk together olive oil, vinegar, mustard, salt and pepper; set aside.
  4. To serve, in a medium bowl combine arugula, spinach and microgreens. Drizzle with vinaigrette; toss to coat. Arrange greens mixture and cherry tomatoes on each pizza. Top with shaved Parmesan and garnish with fresh basil, if desired.
