Makes 6 servings (1 slice each)

  • 1 recipe Cheesy Pizza Dough (recipe below)
  • 1 tablespoon olive oil
  • 1 medium green pepper, diced
  • ½ of a medium onion, diced
  • 1 cup Tomato Pizza Sauce (recipe below)
  • 2 tablespoons cold water
  • 1 tablespoon all-purpose flour
  • 10 ounces sliced mozzarella cheese, divided
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¹⁄₈ to ¼ teaspoon crushed red pepper
  • 6 ounces pizza-style thinly sliced Canadian bacon

Prepare Cheesy Pizza Dough, below. Place in a greased bowl, turning to coat all surfaces. Cover with a slightly damp towel. Let rise in a warm place about 30 minutes or until nearly doubled in size.

Meanwhile, in a large skillet heat oil over medium heat. Add green pepper and onion; cook about 5 minutes or until tender, stirring occasionally. Remove from skillet; pat dry with paper towels. Transfer Tomato Pizza Sauce (recipe here) to a small saucepan. Combine water and flour; stir into sauce. Cook over medium heat until thickened and bubbly, stirring frequently. Cook and stir for 1 minute more.

Grease a 9-inch springform pan. Punch dough down. Using floured hands, press dough onto the bottom and 1¾ inches up the sides of the pan. Cover and let rise in a warm place for 15 minutes.

Preheat oven to 450°F. Arrange 8 ounces sliced mozzarella cheese over bottom of dough, pressing cheese into bottom edge and making sure cheese covers bottom completely. Add green pepper mixture; sprinkle with Parmesan cheese, oregano, thyme, salt and crushed red pepper. Add Canadian bacon and remaining 2 ounces cheese, torn in pieces; top with the thickened sauce.

Bake about 30 minutes or until edge of crust is crisp and browned and filling is heated through, covering loosely with heavy foil for the last 15 minutes to keep pizza crust from overbrowning. Bake, uncovered, 2 to 3 minutes more or until cheese is melted. Let stand on a wire rack for 20 minutes to allow pizza to set. Remove side of springform pan. Cut pizza into wedges.

Cheesy Pizza Dough

Makes 1 crust

  • 2⅓ to 2⅔ cups all-purpose flour, divided
  • ¼ cup shredded cheddar cheese
  • 1½ teaspoons active dry yeast
  • ¼ teaspoon salt
  • 1 cup warm water (105° to 115°F)
  • 2 tablespoons olive oil
  • 1 teaspoon honey or sugar

In a medium bowl combine 1¼ cups of the flour, the cheese, yeast and salt; add warm water, oil and honey. Using a wooden spoon, stir until combined, then stir vigorously for 1 minute. Stir in as much of the remaining flour as possible.

Turn dough out onto a lightly floured surface. Knead about 3 minutes or until dough is smooth and elastic, adding only enough remaining flour to prevent sticking. Continue as directed in pizza recipe.
