Makes 6 servings

Ingredients

  • 1 recipe Cheesy Pizza Dough (see below)
  • 1 tbsp olive oil
  • 1 medium green bell pepper, diced
  • ½ of a medium onion, diced
  • 1 cup Tomato Pizza Sauce (see below)
  • 2 tbsp cold water
  • 1 tbsp all-purpose flour
  • 10 oz sliced mozzarella cheese, divided
  • ¼ cup grated Parmesan cheese
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp salt
  • ⅛ to ¼ teaspoon crushed red pepper
  • 6 oz pizza-style thinly sliced Canadian bacon

Directions

  1. Prepare Cheesy Pizza Dough (see below). Place in a greased bowl, turning to coat all surfaces. Cover with a slightly damp towel. Let rise in a warm place about 30 minutes or until nearly doubled in size.
  2. Meanwhile, in a large skillet heat oil over medium heat. Add green pepper and onion; cook about 5 minutes or until tender, stirring occasionally. Remove from skillet; pat dry with paper towels. Transfer Tomato Pizza Sauce (see below) to a small saucepan. Combine water and flour; stir into sauce. Cook over medium heat until thickened and bubbly, stirring frequently. Cook and stir for 1 minute more.
  3. Grease a 9-inch springform pan. Punch down dough. Using floured hands, press dough onto the bottom and 1¾ inches up the sides of the pan. Cover and let rise in a warm place for 15 minutes.
  4. Preheat oven to 450°F. Arrange 8 ounces sliced mozzarella cheese over bottom of dough, pressing cheese into bottom edge and making sure cheese covers bottom completely. Add green pepper mixture; sprinkle with Parmesan cheese, oregano, thyme, salt and crushed red pepper. Add Canadian bacon and remaining 2 ounces mozzarella cheese, torn in pieces; top with the thickened sauce.
  5. Bake about 30 minutes or until edge of crust is crisp and browned and filling is heated through, covering loosely with heavy foil for the last 15 minutes to keep pizza crust from overbrowning. Bake, uncovered, 2 to 3 minutes more or until cheese is melted. Let stand on a wire rack for 20 minutes to allow pizza to set. Remove side of springform pan. Cut pizza into wedges.
