Sizzling with smoky perfection, these juicy, tender chicken kabobs are simple to make. Marinated chunks of chicken breasts alternate with fresh mushrooms, red onion and grape tomatoes for an easy grilled meal.

Makes 6 servings

Ingredients

  • 1 pound skinless, boneless chicken breasts, cut into 1-inch chunks
  • 1 cup Italian salad dressing
  • 16 oz baby bella mushrooms, stemmed
  • 1 large red onion, cut into 1½-inch crescents
  • 8 oz grape tomatoes

Directions

  1. Marinate chicken chunks in Italian dressing for 2 hours, covered, in refrigerator. Meanwhile, soak wooden skewers in water at least 30 minutes. Preheat grill to medium heat. Thread skewers, repeating following pattern: mushrooms, chicken, onion crescents and tomatoes. Grill 10 to 15 minutes or until chicken is thoroughly cooked, turning occasionally to cook evenly.
