Here’s a salad that features the crisp goodness of fresh broccoli with bacon, red onion, dried cranberries and sunflower kernels—finished off with a tantalizingly simple dressing.
Makes 14 servings
Ingredients
- ½ cup low-fat plain yogurt
- ½ cup mayonnaise
- ½ cup granulated sugar
- 2 tbsp apple cider vinegar
- 1 bunch broccoli, cut into bite-size florets
- 1 cup diced red onion
- ½ cup dried cranberries
- ½ cup sunflower kernels
- 10 slices bacon, cooked and crumbled
Directions
- In a medium bowl stir together yogurt, mayonnaise, sugar and vinegar. Stir in broccoli, onion and cranberries. Cover and refrigerate. Just before serving, stir in sunflower kernels and crumbled bacon.
