Watermelon may be an unexpected ingredient in salsa, but it’s a welcome one. Here it is paired with kiwifruit, red onion and jalapeño for a little kick.
Makes 16 servings
- 2 cups diced watermelon
- 2 kiwifruits, peeled, sliced and quartered
- 1 cup diced strawberries
- ½ cup diced red onion
- 1 jalapeño pepper, seeded and diced*
- Juice of 1 lime
- Salt, to taste
In a medium bowl combine all ingredients. Serve with baked pita chips.
*Note: Chile peppers contain volatile oils that can burn your skin and eyes. When working with jalapeños, wear protective gloves.
