Raspberry Coulis

Makes 2 cups


  • 4 cups raspberries
  • ¾ cup granulated sugar
  • 2 tbsp fresh lemon juice


  1. In a small saucepan, combine raspberries, sugar and lemon juice. Simmer over medium-low heat for 8 to 10 minutes or until the sugar dissolves and mixture slightly thickens.
  2. Strain raspberry mixture through a fine-mesh sieve set over a bowl, using the back of a spoon to press the raspberries against the sieve to release their juices. Discard fruit pulp. Cool sauce before serving.
