Maple Glazed Donuts

Donuts should be simple—like these maple beauties. Made from home-style canned biscuits rather than a batter, these are shaped and deep-fried in mere seconds. For the topper, dip them in a quick-and-easy boiled frosting of maple, butter and confectioners’ sugar. The glaze hardens to a pleasing sheen.

Makes 20 servings

Ingredients

  • ¾ cup brown sugar
  • 6 tbsp butter
  • ⅓ cup milk
  • 3 ¼ cups confectioners’ sugar
  • 1 ½ tsp maple flavoring
  • Canola or vegetable oil for deep-fat frying
  • 2 tubes home-style refrigerator biscuits
  • 1 cup all-purpose flour

Directions

  1. For frosting, in a medium saucepan combine brown sugar and butter. Bring to boiling. Add milk and return to boiling. Remove from heat. Whisk in confectioners’ sugar and maple flavoring until smooth. Set aside.
  2. In a large heavy skillet or deep-fat fryer, heat enough oil to provide 1½ inches of frying depth to 375°F. Roll 1 raw biscuit dough into a ball. Flatten into a circle. Poke a hole in center of dough, then stretch dough to expand the hole. Dust with flour and add to oil. Dough takes only seconds to fry. When one side has browned, use a slotted spoon to turn it over. Remove when the donut is golden brown and transfer to a baking sheet lined with paper towels. Repeat for each biscuit.
  3. After each mini donut has cooled for 5 minutes, dip top into warm frosting. Let frosting set for 3 minutes before serving.
