Honey-Vanilla Whipped Mascarpone with Stone Fruit

Makes 8 servings

Ingredients

  • 2 cups mascarpone cheese
  • 2 tbsp honey
  • 4 tsp lemon zest
  • 4 tsp powdered sugar
  • 1 tsp pure vanilla extract
  • 1 tsp salt
  • 1 recipe Macerated Stone Fruit, below
  • Fresh thyme sprigs, for garnish
  • Cinnamon tortilla chips, for serving

Directions

  1. In a food processor, combine mascarpone cheese, honey, lemon zest, powdered sugar, vanilla and salt. Cover and process for 1 to 2 minutes or until mixture is combined and fluffy.
  2. Transfer cheese mixture to a shallow serving bowl. Top with Macerated Stone Fruit. Garnish with thyme sprigs, if desired. Serve with cinnamon tortilla chips, if desired.
  3. MACERATED STONE FRUIT: In a medium bowl, combine 1 cup pitted and sliced nectarines and plums, 2 tablespoons granulated sugar and 1 tablespoon fresh orange juice. Cover and refrigerate for 2 hours or until fruit begins to soften and juices develop.
