Honey-Vanilla Whipped Mascarpone with Stone Fruit
Makes 8 servings
Ingredients
- 2 cups mascarpone cheese
- 2 tbsp honey
- 4 tsp lemon zest
- 4 tsp powdered sugar
- 1 tsp pure vanilla extract
- 1 tsp salt
- 1 recipe Macerated Stone Fruit, below
- Fresh thyme sprigs, for garnish
- Cinnamon tortilla chips, for serving
Directions
- In a food processor, combine mascarpone cheese, honey, lemon zest, powdered sugar, vanilla and salt. Cover and process for 1 to 2 minutes or until mixture is combined and fluffy.
- Transfer cheese mixture to a shallow serving bowl. Top with Macerated Stone Fruit. Garnish with thyme sprigs, if desired. Serve with cinnamon tortilla chips, if desired.
- MACERATED STONE FRUIT: In a medium bowl, combine 1 cup pitted and sliced nectarines and plums, 2 tablespoons granulated sugar and 1 tablespoon fresh orange juice. Cover and refrigerate for 2 hours or until fruit begins to soften and juices develop.
