Ingredients
- 2 pounds baby carrots
- 2 tsp grated fresh ginger root
- 2 tbsp olive oil
- Salt and pepper, to taste
Directions
- Preheat oven to 300°F. In a 13×9×2-inch baking dish, toss together carrots, ginger and oil. Season to taste with salt and pepper. Roast for 2 hours or until tender, stirring once.
