Homemade Ice Cream with Fresh Fruit

Bring together two of summer’s best treats in one dessert: homemade ice cream and sweet, juicy berries. Before the ice cream hardens completely, fold in your choice of berry jam and a couple handfuls of fresh or frozen berries. When it’s time to dig in, creamy white scoops will be woven with waves of bright fruit. No topping can do it justice.

Makes 12 servings

Ingredients

  • 3 cups heavy cream
  • 1 ¼ cups sugar
  • Pinch of salt
  • 1 ¼ tbsp pure vanilla extract
  • 1 ½ cups half-and-half
  • ½ cup strawberry jam, divided
  • ½ cup blackberry jam, divided
  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blackberries
  • Fresh mint leaves

Directions

  1. Place empty airtight container in freezer 2 hours before mixing. In a large mixing bowl whisk together heavy cream, sugar, salt, vanilla and half-and-half. Transfer to ice-cream maker and freeze according to manufacturer’s instructions.
  2. Remove airtight container from freezer. Scoop one-third of ice cream into the container evenly. Spoon ¼ cup strawberry jam and ¼ cup blackberry jam onto ice cream. Layer one-third of ice cream on top. Place remaining jam onto ice cream. Top with remaining ice cream. Use a butter knife to gently swirl the ice cream and jam layers together. Place in freezer for 2 hours before serving.
  3. Scoop into individual bowls and serve with fresh strawberries and blackberries. Garnish with mint leaves.
