Spring Roll Salad

Unroll this classic comfort food. Build a fresh salad with edamame, quinoa, cucumbers, bell peppers, red cabbage and julienned carrots. Sprinkle on green onions, peanuts and cilantro, then dress with delicious Thai peanut dressing.

Ingredients

  • 1 cup cooked shelled edamame
  • 1 cup shredded red cabbage
  • 1 cup sliced Persian cucumbers
  • 1 cup chopped red bell pepper
  • 1 cup spiral-cut peeled carrots
  • ¼ cup sliced green onions
  • 1 tbsp dry roasted peanuts
  • Fresh cilantro leaves, for garnish
  • ¼ cup bottled Thai peanut dressing, for serving

Directions

Arrange edamame, quinoa, cabbage, cucumbers, bell pepper and carrots in a medium serving bowl. Top with green onions and peanuts. Garnish with cilantro, if desired. Serve with Thai peanut dressing.
