Makes 10 servings
- 2 pounds baby carrots
- 2 teaspoons grated fresh ginger
- 2 tablespoons olive oil
- Ground black pepper
Preheat oven to 300°F. In a 13×9×2-inch baking dish, toss together carrots, ginger and oil. Season to taste with salt and pepper. Roast for 2 hours or until tender, stirring once.
