These crisp little cookies, made using a cookie press, have a rich buttery flavor with a hint of orange, cinnamon and ginger. Sprinkle the raw dough with sugar crystals before baking and serve single cookies or make sandwich cookies with purchased frosting.
Makes 12 cookies
- ½ cup unsalted butter, softened
- ½ cup plus 2 tablespoons powdered sugar, divided
- 2 teaspoons orange zest
- ½ teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- 1 cup all-purpose flour
- Sugar crystals, for garnish
- Purchased pink frosting, optional
Preheat oven to 325°F. In a mixing bowl, beat butter with an electric mixer on medium for 30 seconds. Add ½ cup powdered sugar, orange zest, ginger and cinnamon; beat until thoroughly combined. Beat in flour until well mixed, kneading if necessary until smooth.
Force dough through a cookie press onto a lightly floured cookie sheet.
Bake for 18 minutes or until lightly golden.Cool completely. Sift remaining powdered sugar on spritz. Sprinkle with sugar crystals. If desired, create cookie sandwiches by adding a layer of pink frosting in between two cookies.
